Happy Farmers are placed on trays inside a freeze-dryer using a specialized warming profile. Hard candy contains a tiny, trapped micro-amount of moisture. Under a deep vacuum, the machine warms the sugar just enough to make it pliable while forcing that moisture to vaporize. This causes the candy to balloon dramatically, growing into a porous, colorful puff up to four times its original size before cooling into a solid, hollow state.
