Texture and Flavor Evolution

Explosive Puffing: Hard peppermint discs are packed with tiny air pockets trapped during manufacturing. When exposed to the deep vacuum of a freeze dryer, these tiny pockets expand significantly. The mints balloon into lightweight, oversized versions of themselves.
