Freeze-dried Papas

When traditional Papas fruit chews go through a freeze-dryer, they undergo one of the most drastic transformations in the entire candy world. The process strips out 100% of the moisture via sublimation, entirely re-engineering the candy’s structural density. The Structural Transformation Texture Flip: Papas shift from a dense, stiff, tooth-shattering chew into an ultra-light, melt-in-your-mouth puff. The “Sherbet Bite” Effect: Many candy creators note that the texture expands into a porous, airy structure resembling a crisp sherbet bite or marshmallow puff. Weight

When packaging freeze-dried fruits and candies, fluid ounces measure volume, not weight, which often confuses people because freeze-drying removes up to 90% of a food's water content. This means an identical deli container size will hold drastically different net weights depending on how much the food expands or contracts during the freeze-drying process.

Standard Deli Container Sizes & Average Net Weights
Deli containers are universally measured in fluid ounces (volumetric space). Because freeze-dried foods are highly porous and light, their actual scale weight is a fraction of the container’s volume.

• 8 oz Container (Half-Pint / Small)
o Estimated Net Weight: 1.5 to 2.5 ounces of candy; 0.5 to 1 ounce of fruit.

• 16 oz Container (Pint / Medium)
o Estimated Net Weight: 3.5 to 5 ounces of candy; 1.5 to 2.5 ounces of fruit.

• 32 oz Container (Quart / Large)
o Estimated Net Weight: 7 to 10 ounces of candy; 3 to 5 ounces of fruit.
