How It Is Made

Traditional taffy contains tiny amounts of water and whipped air pocket emulsions. When placed on heated trays inside a deep freeze-dryer vacuum, the moisture rapidly vaporizes and tries to escape. Because the sugary base becomes warm and pliable, the internal pressure forces the taffy to balloon outward into a hollow, colorful ball before setting solid.
